Fresh ginger tea recipe

Recently, I had a virus that lasted several weeks that included a persistent cough. I remembered a simple remedy from our time in Bali that I thought I could probably replicate. It took a few attempts but eventually, it tasted just as I remembered. As well as offering the healing benefits of the ingredients, it’s beautifully warming on a wintery afternoon.

Fresh ginger tea recipe

10 slices of fresh ginger (unpeeled)

2 cups water

Juice of half a lemon

Good quality organic honey

Add the ginger slices to a small saucepan with water and boil gently with the lid on for ten to fifteen minutes (until the water starts to colour). For a stronger ginger flavour, keep boiling gently for another five minutes or so.

Strain the ginger infusion into a cup and squeeze in the juice of half a lemon. Stir in a teaspoon of honey (to taste).
